This recipe has been in my file for years; I'm not sure where it originally came from. It's a good recipe to use when you want a departure from traditional meatloaf.
1 1/2 pounds ground beef
1 cup dry bread crumbs
1 tsp. salt
1/4 tsp. pepper
2 eggs
1 tsp. dried onion
1 can (15 oz.) tomato sauce, divided (I used two 8 ounce cans)
Topping:
Reserved tomato sauce (or another 8 oz. can)
2 T. brown sugar
2 T. vinegar
2 tsp. mustard
1/2 cup sugar
Mix together beef, bread crumbs, salt, pepper and eggs. Add onions and 1/2 of tomato sauce. Form into loaf in bread pan. Bake at 350 degrees for 50 minutes. In saucepan, combine topping ingredients; bring to boil. Pour over meatloaf; bake 10 minutes more. Makes 6 servings.
