This recipe has been in my file for years; I'm not sure where it originally came from.
1 large box lime Jell-o
1 can crushed pineapple
2 cups cold water
2 cups boiling water
1 - 8 oz. pkg. cream cheese
Dissolve Jello in boiling water. Add cold liquid (water and/or pineapple juice). Refrigerate until gelling. Beat in softened cream cheese; stir in pineapple. Refrigerate to set.
