2 cups pancake mix
3 T. brown sugar
2 1/2 tsp. pumpkin pie spice1 1/2 cups milk
1 cup pumpkin puree
2 T. vegetable oil
2 T. vinegar
- In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the pancake mix, brown sugar, and pumpkin pie spice, stir into the pumpkin mixture just enough to combine.
- Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
