Pumpkin Pancakes

Adapted from

2 cups pancake mix
3 T. brown sugar
2 1/2 tsp. pumpkin pie spice1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 T. vegetable oil
2 T. vinegar
  1. In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the pancake mix, brown sugar, and pumpkin pie spice, stir into the pumpkin mixture just enough to combine.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
